Homemade Pizza - Part 1

When the moon hits your eye like a big pizza pie, that amore!
To make this heavenly dough you'll only need five ingredients. 1 1/2 cups of warm water, 1 package of active dry yeast, 3 1/2 cups of all-purpose flour(or bread flour...it will give you a crispier crust, but all-purpose works great too), 2 tablespoons of olive oil, 2 teaspoons of salt, and 1 teaspoon of sugar.
Start off by adding warm water into a bowl like this one and sprinkling in your yeast. Let it sit for 5 or so minutes and whisk to dissolve completely.
Next, add olive oil, flour, salt, and sugar into your bowl and mix together with your hands. Continue kneading for 5 minutes. (You can use a mixing paddle to mix ingredients and then use a dough hook to knead it, if you have them)

Place your ball of dough in a bowl that has been lightly coated with olive oil and turn the dough around in the bowl so that it is coated with oil.
Now, turn your oven on to 150 degrees and once it reaches that temperature, turn it off and let your bowl of dough sit in the oven until it doubles in size, about 1 to 1 1/2 hours.

Mema's perfect s'mores


Over the holidays me, Taylor, Griff, Mom, and Dad went to Mema and Papa's for spaghetti. It was a much needed visit with two of the most wonderful people I know. Anyways...Papa poured himself a cup of coffee into this 50 year-old coffee cup. Yes you heard me, 50 years old and not a chip or crack anywhere to be found. He sips out of the cup every morning and entrusts Mema with the responsibility of carefully washing his cup so he can continue his tradition. I remarked that it looked like he took it out of a diner. To my surprise, he actually did. He said when he was in high school his father owned a 24-hour diner in South Carolina and the cup came from that diner. It was amazing to me that after all the years, he still has this cup...this piece of history...a story to share with his grandchildren.
